There are certain meals you expect to forget. Airplane breakfasts are usually one of them.

They are convenient, filling and something to eat while watching the clouds drift past the window. By the time the plane lands, most of us have already forgotten what was sitting on the tray table.

But every once in a while, something unexpectedly simple leaves an impression.

That happened to me on a recent flight when I opened a small container with Peach Muesli Yogurt .

Peach Muesli Yogurt Bowl

Peach Muesli Yogurt

  • 2 cups whole-milk plain yogurt
  • ¾ cup original muesli
  • ½ cup finely diced peaches
  • ¼ cup unsweetened applesauce
  • 2 tablespoons pear juice or apple juice
  • 1 tablespoon honey
  • ½ teaspoon fresh lemon juice
  • ¼ teaspoon ground cinnamon
  • Small pinch ground ginger
  • Tiny pinch ground allspice
  • Pinch of sea salt

Coconut-Almond Granola

  • ¾ cup old-fashioned rolled oats
  • ⅓ cup unsweetened coconut flakes
  • ¼ cup whole almonds, roughly chopped
  • 2 tablespoons pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon ground flaxseed
  • 1½ tablespoons honey or brown rice syrup
  • 1 tablespoon neutral oil
  • Pinch of sea salt

For Serving

  • ⅓ cup dried tart cherries
  • Additional diced peaches, optional
  • Honey for drizzling, optional

Instructions

  1. Prepare the peach muesli. In a medium bowl, combine the yogurt, muesli, peaches, applesauce, juice, honey, lemon juice, cinnamon, ginger, allspice and salt.
  2. Chill overnight. Cover the bowl and refrigerate for at least six hours, preferably overnight. This allows the grains to soften and thicken the yogurt.
  3. Check the consistency. Stir the muesli thoroughly the next morning. If it is thicker than you prefer, add one or two tablespoons of milk.
  4. Heat the oven. Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.
  5. Mix the granola. Combine the oats, coconut, almonds, pumpkin seeds, sunflower seeds, flaxseed and salt. Add the honey and oil, then stir until everything is lightly coated.
  6. Bake until golden. Spread the mixture evenly over the baking sheet. Bake for 15–20 minutes, stirring once halfway through.
  7. Cool completely. Allow the granola to cool on the pan before breaking it into clusters. It will become crisp as it cools.
  8. Assemble the bowls. Spoon the chilled peach muesli into serving bowls. Top with coconut-almond granola, dried cherries and additional peaches.
For the closest texture: Use regular whole-milk yogurt rather than Greek yogurt. The soaked muesli naturally thickens the mixture and creates the soft, creamy texture that makes the original bowl so memorable.

A Better Way to Begin a Busy Morning

One of the best things about this recipe is that most of the work happens the night before.

The peach muesli can be prepared and refrigerated for up to three days. Keep the granola in a separate airtight container so it stays crisp, then assemble each bowl just before serving.

It is ideal for busy weekdays, weekend brunches or those mornings when you want something nourishing without having to cook before the coffee has even finished brewing.
